How to make deep fried chicken wings

A good chicken wing recipe is worth its weight in gold.  Find a good one and hang on to it, treasure it for in it you may please a multitude of finger-lick’in-chicken-eaters!

Here in this guide the chicken wing fan will find a tried and true recipe.  One that never fails to bring rave reviews!

Here is a step-by-step guide for cooking "Finger-Lick'in-Chicken Wings."

Instructions
Step 1
Rinse & Dry Wings

 

Place 18-20 chicken wings into a colander.  Rinse wings under cold running water,  turn out onto several thicknesses of paper towels or clean kitchen towel, pat dry.

Step 2
Marinate Wings

 

In a large bowl add the buttermilk, onion and garlic powders and basil and stir well.  Add the chicken wings and stir to coat all.  Cover this with cling-wrap and let the wings marinate for at least 2 hours.

Step 3
Dredge Wings

 

Combine salt, pepper, and cayenne pepper with the flour, stir to combine.

 

Take the wings out of the refrigerator, pour all wings into a large colander to drain off the buttermilk. Dredge the well drained wings in seasoned flour.  Let these sit, arranged in a single layer on a baking sheet for 10 minutes.

Step 4
Prepare Deep Fryer

 

Pour 48 ounces of Peanut Oil or your favorite deep frying oil into deep fryer.  Set temperature to 360oF.  Allow fryer to reach this temperature.

Step 5
Fry

 

Depending on the size of your deep fryer anywhere from 8-12 minutes per batch.

Step 6
To Serve Finger-Lick’in-Chicken-Wings

 

These wings are best served hot, on a big platter garnished with celery stick curls surrounding a fiery hot picante sauce and sour cream mixture for dipping.

 

Fiery Hot Dipping Sauce

 

1 cup HOT Pace Picante Sauce

1 cup regular cultured sour cream

 

Combine picante sauce and sour cream in a serving bowl. Place the dipping sauce in the middle of your serving platter and arrange the delectible cooked wings around the bowl. "Finger-Lick'in!"

Things Needed
18-20 trimmed Chicken Wings
2 cups Buttermilk
1/2 tsp. Onion Powder
1/2 tsp. Garlic Powder
1 tsp. Dried Basil
2 tsp. Sea Salt
1 tsp. Black Pepper
1/2 tsp. Cayenne Pepper
2 cups All-Purpose Flour
2 Large Mixing Bowls
Colander
48 ounces Peanut or Canola Oil
Electric Deep Fryer
Long Handled Tongs
Paper Towels or Kitchen Towels
Serving platter
1 cup Hot Picante Sauce
1 cup Sour Cream
Tips & Warnings   
Fry the wings in one or two batches, depending on the size of your deep fryer. Overcrowding the deep fryer can bring the temperature of the oil down and this will add cooking time to your recipe.
Use long handled tongs to remove wings from fryer basket, to avoid burned fingers.
